Day 18 of Water Only Fasting

The end is near, and the broth has been my elixir of life. I feel human again and am up for the challenge. This morning’s class was supposed to be a Q and A with Cathy Fisher, but Chef Bravo conducted a cooking class instead. When I heard that, I was afraid I might need to leave, as the broth had given me an appetite. I wasn’t sure how seeing food I couldn’t eat might make me feel.

Luckily, it was a class on making salad dressing. According to Chef Bravo, people usually make dressings in the ratio of three parts oil to one part vinegar. Since we do not eat oil, Chef Bravo made two dressings packed with flavor but without oil. It must have three components to make flavorful no-oil dressing: a dominant flavor, viscosity, and a secret ingredient. He made two dressings for us: a red pepper dressing and an Indian curry. When I start re-feeding next week, hopefully, I can sample these. When you eat a whole food plant diet, your food doesn’t contain preservatives, so you must eat them within a few days.

Remember, oil is 120 calories per tablespoon with no real nutritional value. Why would you put it in your mouth if you wouldn’t pour it down your sink?
