Today was a good day. I woke up with good energy. By the end of the day, I could drink over 6 glasses of water which is a huge improvement. I decided to go to the 10 AM class despite it being a cooking class and feeling hungry. I sat in the back of the room for that reason.
Today, the speaker talked about putting together easy but satisfying meals that don’t require a recipe. This is how I normally eat daily. She described it as a pyramid, with some starch at the bottom, veggies in the middle, and a condiment at the top. This method makes it very easy to assemble a satisfying meal with lots of variety. Also, spices can be added to give unlimited flavor combinations. Eating good-quality spices goes a long way toward giving variety and flavor to most dishes.
STARCHES- beans, lentils, potatoes, rice, winter squash
VEGETABLES- mushrooms (a fungus), broccoli, zucchini, kale, onion, green beans, etc.
CONDIMENTS- hummus, gravy, salsa, avocado, pesto, mustard, marinara, etc.
Cathy put together one brown rice, beans, and corn dish, sitting on a bed of greens with salsa on top. The other was a Yukon gold potato with various veggies and guacamole. We made homemade salsa and guacamole as condiments. We also made chips from corn tortillas baked in the oven to crisp.
My usual go-to is a potato with broccoli, cauliflower cheese sauce on top, and maybe a hot sauce to spice it up. I love the cauliflower cheese sauce as it’s another opportunity to add more veggies to my diet. It is also low in fat and does not make me feel heavy after eating it. Actual cheese has more calories from fat than it does from protein. It is not a health-promoting food. Eating healthy does not need to be boring and can be the food that you crave.
