Water Only Fasting- Day 6 of re-feeding

My digestive system was not fully up and running this morning, so I had a fruit salad and then tried roasted Kabocha squash as I’d never tried it before. At 10 AM, there was a cooking demo where they made herbed-roasted potatoes and 3 different sauces to go with it; hummus, roasted red pepper sauce, and BBQ sauce. Remember that they use no oil, salt, or sugar when cooking here.

I liked the herb potatoes and the red pepper sauce and will make those at home. The roasted potatoes are so easy to make without oil, coat bite-sized potato pieces with your favorite spices. In this case; Italian seasoning, paprika, granulated onion, and garlic, and a dash of cayenne and fresh ground pepper. Place them on parchment paper at 375 F for 30 minutes until golden brown.

Lunch was delicious. They had a large tray of No Tuna spread that I ate in pieces of lettuce. It tasted amazing, but they didn’t list the ingredients. I didn’t know it had garbanzo beans which I am not supposed to eat until the last step of re-feeding and nuts which I can’t eat until tomorrow. I also ate broccolini, which was amazing, and tomato soup with a scoop of cooked greens on top. The recipe for the No Tuna Spread is down below.

As the weather was so nice this afternoon, I took a long walk up into the hills. It felt great to be out and getting my heart rate up with walking up the hill. I encountered 2 deer crossing the road ahead of me, so that was a surprise. Walking in the cemetery, they have signs up everywhere letting you know that there have been mountain lions spotted there. I am being careful not to overdo it with movement, as I know that I am still a little weak.
