Day 3 of Water Only Fasting

My energy has lowered, but I feel more clear-headed today. When medically monitored twice daily, your energy level is one question they ask. They also ask if you are nauseous or light-headed. Overall, I would say today has been a good day. I could come out of quarantine and attend the 10 am cooking demo. 25 people attended the demo, and being amongst people for a change has been nice. After the demo, I got a book. I sat outside the courtyard watching all the activities, from the medical assistants going from room to room to the kitchen activity to housekeeping. This place is a hive of activity. In the afternoon, Dr. Sultana makes rounds to your room, so I waited for him to come around to see me.
 
 
Cooking demo recipe:
 
Kale Salad
*1 bunch of kale sliced (deveined) chopped thinly into ribbons
* ¼ of a red onion chopped
*1 avocado
*1 C cherry tomatoes sliced in half
*2 T of rice vinegar
*ground black pepper to taste
 
Place all ingredients in a bowl, and break up the avocado massaging it into the kale until the combination of avocado and vinegar makes a dressing that coats the kale.

True North is a bit more restrictive than how we eat at home, but we do eat whole food that is minimally processed and SOS-free (that is, free of salt, oil, and sugar), and no food that comes from animals. The idea is to eat health-promoting foods. I hope in future posts, I can explain why we choose to eat this way.
